    I thought you might enjoy some songs from a couple of super early Fleet Mac records…. From Kiln House there are some really good ones… my favorites are Station Man, Jewel Eye Judy, and Earl Gray. The album called Then Play On has some cool stuff like Searching For Madge and Coming Your Way and Although The Sun Is Shining. Love you and Chris and all that you do! Your show is great!!

    Amazing Response to Trademark Issue
    As a practicing trademark attorney and ardent fan of all things food here. The way Dave and his team responded to the chili crunch trademark controversy in last Friday’s episode was a masterstroke. To those who don’t know how the system works, it’s a good insight into the flaws of the trademark system and all of the comments about Dave being a “bully” could not be more unfounded. Refusing to enforce the mark at potentially great peril to your business shows you have actual skin in the game and care deeply about the AAPI community — something none of your larger competitors would do. To everyone belly-aching about how the Momofuku team has handled it, I’ll put it In simple terms: Basically, the Momofuku Team just picked up a five-to-six figure tab (worth of legal fees) at dinner, and everyone who ate is complaining that Dave Chang didn’t pull out his credit card fast enough. If anything, the angry mobs trying to hurt his business are the real bullies. The Momofuku team and Mr. Chang should be commended for rightfully following the procedures of trademark law, picking up the tab on legal fees, and allowing any business to use the mark. This was a thoroughly principled response and Momofuku, Mr. Chang and his team will always have my respect for this. To everyone hurling abuse at Chang and his team in these reviews: Inform yourselves of what just happened here. A move like this from a company is extremely rare.

    This show had gone downhill since Dave Chang decided it was cool to be a tool. There’s no reason to listen to his self inflated importance, especially while Momofuku is actively going after mom and pop owned brands because Dave Chang decided he invented chili crunch, a condiment he appropriated. Stay classy, Dave.

    David Chang’s greed and ego has left me completely disgusted. He has gone the patent bully route, trying to own chili crunch and chile crunch. As if his own unique genius in changing crisp to crunch could only be attributed to him. If I wasn’t so disgusted and disappointed, this would be so pathetic and petty, it would be funny. Chang can drop his sudo-punk affect. This is the ultimate sellout move. Stomping on the fingers of those below him, trying to climb the same ladder.

    Greed really has taken hold of this man. To goto the lengths he is with his business and go after other businesses in the pursuit of monetary gain is insane. I’ve been buying other brands of Chili Crispy long before Momofuku came around and started selling one. Shame on David and Momofuku. Greed is not good and Wall Street learned all the wrong lessons from the movie.

    Great episode. We try to go back to small local custom butcher shops. One place that’s really setting the bar high is in Ohio, White Feather Meats. They have a YouTube channel called The Bearded Butchers that is incredible. It’s worth a look, not to mention their products are outstanding……

    If you’re going to feature a restaurant on the pod, at least get the pronunciation right ? Took the time to visit the website and view the menu, but too lazy to click on the “about” tab to learn about the place. A producer that isn’t concerned with fake laughing as a KPI could fix this.

    I haven’t found anything good to listen to in so long, but I found myself watching the show on TV and realized there’s a podcast. David has the same sense of humor as me so I find myself laughing constantly!! such a great take on different types of foods & other interesting relevant topics! I’m totally in, but why does your art for the podcast look like a character on South Park? L O L is that on purpose???

    Chrissy Teigen is a terrible person. It’s a bummer you all will work with her. This podcast used to be really good but it has gone downhill and giving the predator a platform is the nail in the coffin.

    I’ve been listening to this podcast since 2018 when it debuted. Dave used to host interesting and thoughtful interviews with top chefs and other industry professionals. I learned a lot from the early episodes. But I get that people only listen to junk now, so that’s what content creators churn out to keep the money flowing. Pretty bummed at how downhill it’s gone.

    Love this podcast and have been listening for a long time. Started drinking Athletic brewing Co beer due to your recommendation. I was at Mokofuku noodle bar Columbus Circle tonight. It would have been great to have with the dry fried wings (amazing btw) and potatoes. I was really surprised that you were not serving Athletic Brewing Co beer there and mentioned it to the server. Thank goodness you serve Terra. Please add Athletic Brewing options to your menus!

    I’ve become really bored with this podcast. Seems Dave is tired of talking about food and really wants to have a sports podcast. Feels like a Simmons knock off and not a pod about food and restaurants. Episodes seemingly take forever to get going. And like most pods has devolved into two people with their inside jokes just laughing at everything the other says. Had to turn last episode off. Has really gotten unlistenable. Same as Simmons with all the silly references referring back to unrelated stuff. Loved this podcast but it’s jumped the shark.

His commentary has given me a greater appreciation for the workers in the restaurant business. What I really enjoy is his international experiences to tell the listeners what excellence really looks like, i.e., sushi from Japan versus anywhere in the US. I do miss his interviews, e.g., Dr. Kim.

    Love the show…. Until the episode of ambitious restaurant Dave mentioned restaurant about Taiwan dishes and called the people THAI. This is so culturally inaccurate and insensitive. Thai are from Thailand, and Taiwanese are from taiwan! Pls correct that.

    Sound Mixing Off Recently
    I love this podcast. Former five star rating, but the sound mixing has just been driving me nutso recently. Really inconsistent between the two primary hosts, guests, and ads. It’s fine if you are at home and listening on a speaker you can easily adjust, but I would not listen when wearing earbuds or while driving. Also good chance I’m just going deaf or something. Again, love everything about this podcast, but the sound mixing (or whatever it’s called) this season is off.

    Dave, Does it really matter how you cut an onion? I went to culinary school, worked in fine dining as well as fast casual with 20+ years under my chef coat. In my travels I have found easier ways of prepping onions rather than the old fashion French dice method. Just curious because I still have a small amount of guilt in the back of my mind if I don’t cut an onion the way I was taught by my stocks and sauces chef in school. Culinarily yours, Sean Fernandez

Unfortunately for me the one thing I don't love, is Chris as your co-host. He is so desperate to be funny, he always falls flat! I WAY prefer the podcast when its just you and basically anyone else . Sorry, not sorry :)

    It's just a matter of time each episode before the host says something totally oblivious to the struggles of the working class. During the most recent episode I listened to, he say he wouldnt hang out with someone who refuses to pick up more than their share of a bill when splitting a check at dinner. This is just one of many examples of how out of touch he is with people who have little money or have to live on a budget. Dont believe me? Listen for yourself.

    Man I have loved this podcast for many years but Chris, bro, please you don’t have to do the fake laugh at absolutely everything Dave says. Just be a good co-host and keep the convo flowing. I literally don’t understand why you’re constantly laughing…is it nerves? Are you trying to ingratiate yourself to the boss? This is the single best food podcast in the game because of Dave’s topics and convos but it’s also the most unbearable because of the nonstop unrealistic laughing from Chris. Please, Chris…bro…just chill on the excessive pretend laughter and a lot of people will be very appreciative + happy to keep rocking with you. 🙏

    Long time listener and fan but i found it pretty difficult to listen to Dave going on for almost a whole segment about how he doesn’t want to talk to people. It feels a bit privileged to sit in a position of power and reach that was literally driven by a fan base that put him there and on a platform where we go to listen to him talk to basically be told he wouldn’t give us the time of day on the street. I have a small fan base of my own and I often encourage them to “always say hello” if they see me. If I have the time to give them I will if not I politely let them know. It’s the cost of doing business in the public eye. I’ll be tuning out for a while to let this bad taste pass.
